sweet & moist date cake

if you want the indulgences of cake with no artificial ingredients and sugars, then this sweet treat is for you boo

  • 12 medjool dates, pitted

  • 3 large eggs

  • ½ cup (150g) maple syrup

  • 1 tsp (5g) vanilla extract

  • ¾ cup (170g) greek yogurt, we prefer using something like Oikos Pro that has lower fat and higher protein content

  • 1 cup (170g) of all purpose flour or we like to use our protein oats though and blend them into a flour and for that we use 1 ¼ cups of oat flour

  • 1 tsp (4g) baking powder

  • ½ tsp (3g) baking soda

  • ½ tsp (3g) salt

  • Tsp (2g) of cinnamon

Preheat oven to 350 F

Chop dates into a paste and then combine eggs, maple syrup, yogurt and vanilla extract and whisk until combined.

Combine all dry ingredients together in a separate bowl and whisk together.

Once dry ingredients are all incorporated, add them to the wet ingredients and use a rubber spatula to fold together dry and wet ingredients.

Using a 8” round pan, layer with parchment paper and spray with nonstick baking spray.

Pour in batter and cook for 20 minutes or until a cake tester comes out dry out of the center.

We like to serve it with some more yogurt on top, honey and some fresh fruit or just as a snack on its own.
